Texas Barbecue Sauce
1/2 cup onion, finely chopped 2 tbls. brown sugar 1 tbls. paprika 1 tsp. salt 1 tsp. dry mustard 1?4 tsp. chili powder 1/8 tsp. cayenne pepper 2 tbls. Worcestershire sauce 1/4 cup vinegar 1 cup tomato juice 1?4 cup ketchup 1?4 cup water Mix together all ingredients and simmer for 15 minutes. Yields 4 cups or enough for 3 pounds of ribs. Mix and dip chicken pieces in. Put chicken on grill. Use pastry brush and keep brushing chicken whenever it looks dry. The last 30 minutes of grilling, brush KC Masterpiece barbecue sauce on, turning to coat both sides. Grill until tender. Yields 24 pieces. Ida Ann Martin, Versailles, Mo.
Tomato Barbecue Sauce 2 tbls. butter 1 onion, finely chopped 2 cloves garlic, finely chopped 1?2 cup celery, finely chopped 2 cups tomato juice 1?4 cup lemon juice 1?4 cup lightly packed brown sugar 1 tsp. salt 1 tsp. dry mustard 2 tbls. Worcestershire sauce Pinch of cayenne pepper
In a small saucepan, heat butter until foamy. Add chopped onion, garlic and celery and continue to cook until onion is transparent. Stir in remaining ingredients. Bring to boil; reduce heat and simmer uncovered for 25 minutes. May be used for basting chicken, hamburgers and ribs while barbecuing or as sauce with baked spare ribs. Yields 2 cups. Smokey Barbecue Sauce 1 cup ketchup 1/2 cup vinegar 1/2 cup onion, chopped 1 cup brown sugar 1/2 tsp. salt 1/4 tsp. pepper 1 tbls. liquid hickory smoke 1 tbls. mustard (optional) 1 1?2 tbls. Worcestershire sauce Mix all together and boil 5 minutes. Use for Sloppy Joes, chicken, hot dogs, ham or however you choose. Homemade ketchup adds to the flavor of this recipe. Yields 4 cups. Sweet-n-Tangy Barbecue Sauce 1 tbls. cornstarch 1?2 cup water 1 cup vinegar 1?2 cup brown sugar 2 tbls. liquid smoke 1?4 cup dark syrup 1 (10 3?4 oz.) can tomato soup 1?2 cup ketchup
In a saucepan, dissolve the cornstarch in water and combine with vinegar, brown sugar, liquid smoke, dark syrup, soup and ketchup. Cook until mixture is slightly thickened. Good with meatballs. Yields 2 cups. Martha Powell, Centralia, Mo.
Mary’s Barbecue Sauce 1 (12 oz.) can tomato juice 1?2 bottle ketchup 1?2 cup sugar 1 tsp. salt 1 tsp. pepper 1 tsp. celery seed 1 tsp. mustard flour 1?2 cup pickle vinegar 1?2 tsp. red pepper 1?2 tsp. garlic powder or chopped onion 1 tbls. chili powder 1 tbls. paprika Mix all dry ingredients.
